{ Guest Post } Being Leanna: Crockpot Tortellini Soup


Hello Everyone! Ashley has been kind enough to let me write a post on her blog today and i'm so excited! Ashley is always sharing tasty recipes so I knew that when I got the opportunity to guest post it would have to be food related. So today i'm sharing my favorite crockpot tortellini soup recipe! It is so easy to make, like most crockpot recipes, you just toss it in there and let it cook while you're at work!  I know people usually think of slow cookers during fall and winter but I think they're perfect for any season because they're just so easy! I can't think of anything more enjoyable than coming home from a long day of work and smelling dinner ready to go. YUM.




Ingredients: 20oz tortellini 2 8oz cans of diced tomatoes 8oz cream cheese 1 bag baby spinach 2 medium zucchinis 32oz vegetable broth salt, pepper, basil.


Directions: Start off by dicing your zucchini and tossing it into the crockpot. Next add in one can of diced tomatoes and drain the other can before adding that as well. Follow that up by adding in the spinach and vegetable broth. When that's done break up your cream cheese and sprinkle that around so it can melt evenly. The last step is to just add in the salt, pepper and basil to your tasting. See how easy that was? Just stir it up and cook it on low for 4-6 hours. About 15 minutes before you're ready to eat, carefully pour your tortellini in (don't want to burn yourself!) and let that cook. Serve it up and voila!  It really is that easy!
