One of goals each month is to try a new recipe, doesn't have to be fancy just something a little different. We are a big potato family and I love to cook oven roasted potatoes, but I never really do anything to them other than throw some olive oil on them and season with salt and pepper. It is amazing how just 1 ingredient can make them taste completely different and how simple it was to have a little different flavor than our normal potatoes!
Ingredients
- 2 pounds potatoes - I used red
- 1 tablespoon of butter
- Olive oil
- Dry Ranch Mix
- Baking dish
Directions
- Preheat oven to 350 degrees.
- Place butter in bottom of baking dish and put in oven until butter is melted and remove from oven.
- Wash and cut potatoes into bite size pieces, bigger if you want - but they will need to cook longer if bigger pieces.
- Place potatoes in the baking dish and lightly drizzle with olive oil and mix together so all the potatoes are covered.
- Mix together the dry ranch mix over the potatoes.
- Bake for 40 - 45 minutes or until they are tender. Throughout the baking process stir potatoes so they do not stick to dish.

Sounds yummy! We usually have ours mashed or baked. I have been looking for a oven roasted potatoes recipe. My kids would love the ranch flavor.

I make similar potatoes and they are my husband's favorite thing in the world, next to my coconut crusted chicken fingers.
I love potatoes more than any other food so adding ranch seasoning would be a little piece of heaven. I'll definitely be using this recipe.
YUM these sound delish! my bff is southern and she raved about these. she made them for me one day and my life was changed. she boiled the potatoes first, smashed them, so they were like thick pancakes, then used the same mixture you did. bomb.com and crunchy!!!
These look delicious! I think the red potatoes will just add to the flavor too! Definitely adding it to our list of sides!
